Basil Pesto

I meant to post this yesterday but I was very busy because it was my birthday! I am able to squeeze this post in while getting ready for the continuing celebration this afternoon :)

Basil Pesto is very easy and most of you will have many of these ingredients on hand. It is a good way to clean out that fridge. I keep walnuts on hand at all times by buying it in large bags and keeping it in the freezer. I always have basil on hand because I make a lot of Italian food. The rest are all staples in my kitchen. This recipe is fast and easy. The only downfall is having to lug out and clean the food processor but that is the only tool you need.

1/4 cup walnuts

4-6 garlic cloves

Bunch of basil (mine came in a plastic container and I used all of it)

1 teaspoon salt

1/2 teaspoon pepper

Olive oil (depends on the consistency you want I used somewhere around 1/2 cup)

1/4 cup grated cheese

Place the garlic and walnuts in a food processor. Pulse until chopped. Add in basil, salt, and pepper. Start the food processor. Drizzle in olive oil while food processor is going. When it has reached the consistency you want stop the food processor. Add the cheese. Pulse until combined.

Serve over pasta or with chicken its so versatile. Enjoy!

    I made this yesterday. I may have had less basil than you and the salt ended up being too much. We planned to make a basil pesto pizza with some mozz and parm cheeses. To help with the salt we served it with fresh cut tomato on the warm pizza. It was perfect!

    @Jason thank you for sharing. I am so happy people are making my recipes. It was probably too much salt because I needed to add a bunch to make up for the weak taste of my garlic. I will adjust it. Thank you for the input.
