So it’s Monday, I usually do not cook on Monday nights because I am too busy preparing for school the next morning. I am a procrastinator when it comes to school so I am too busy reading or writing papers to cook. Last night was one of those nights. Over the weekend, during my cooking spree I made some slow cooker pot roast. It was good the first night and it was just as good last night. The first night we paired the post roast with mashed potatoes (I used boxed only because we were out of potatoes) tonight we paired it with some sauteed zucchini and onions. Below are recipes for both the Pot Roast and the zucchini. Enjoy! (sorry no pictures of this one)
Slow Cooker Pot Roast
1 4-5lb pot roast (I used a beef roast eye round, something with a little fat to keep it moist)
Salt
Pepper
2 tablespoons olive oil
2 onions (each cut in half)
3 carrots cut into 1/2 inch pieces
2 stalks of celery cut into 1/2 inch pieces
1 cup red wine
3 cups of beef broth (you may need more depending on your slow cooker and the size of your pot roast)
Heat the olive oil in a saute pan that is big enough to hold the pot roast. Salt and pepper the roast on all sides. When the olive oil is hot place the pot roast in the pan. Brown on all sides. Once browned place the pot roast in your slow cooker. Add the remaining ingredients to the slow cooker. Make sure that the liquid is at least half way up the pot roast. Set the slow cooker to high if you want it done in 4 hours or low if you want it done in 8 hours (this depends on your slow cooker). I set mine for 8 hours and left it be.
Zucchini and Onions
2 tablespoons olive oil
2 zucchini cut into sticks or slices
1 onion cut in half and then cut into thin slices
Salt
Pepper
1/4 cup of Pecorino Romano or Parmesan cheese
Heat the olive oil in a saute pan. Toss the zucchini with salt and pepper. Saute onions and zucchini in the pan for about 5-8 minutes or until the zucchini is cooked through and the onions have slightly browned. Toss with cheese and serve.
