Irish Cream Cupcakes

Today is Hoboken St Patty’s Day but more importantly it is the O.L.B.S. Irish Night which, I will be attending with some very good friends. In honor of tonight I created this recipe for Irish Cream Cupcakes. Warning: They contain alcohol and are a little boozy.

For Cupcakes

1 box of yellow cake mix

eggs, water, oil (according to the directions on the back of the cake mix box)

Cupcake liners

1/4 cup brewed coffee

1/4 cup Irish Cream

For Irish Cream Frosting

1 stick of unsalted butter softened

4 cups of confectioners sugar

1/4 cup Irish Cream

1 teaspoon of vanilla extract

Green food coloring (I use the gel kind)

Preheat the oven to 350 degrees F. In a large bowl place the cake mix, eggs, oil, and water. Mix with a wooden spoon, hand mixer, or stand mixer. I used a hand mixer. Mix until smooth. Line approx 2 12 cupcake tins with 20 cupcake liners (you may be able to 24 cupcakes out of your mix but I only managed to get 20 out of mine). With an ice cream scoop pour batter into each of the lined cups. Bake according to the directions on the back of you box, approx 17 min or until a toothpick placed in the center of a cupcake comes out clean. Allow to cool.

Mix the Irish cream and coffee in a bowl and set aside.

Meanwhile make the frosting. Place the butter in the bowl of the stand mixer fitted with the paddle attachment (you can use your hand mixer but I prefer to use the stand mixer). Over the bowl place a small sieve (colander) so you can sift the confectioners sugar. Place the confectioners sugar in the sieve (colander) and shake until all the sugar has gone through. Add the vanilla, Irish cream, and food coloring. Mix until smooth.

Now that the cupcakes have cooled brush the tops of the cupcakes with the reserved cream and coffee.

Now it is time to decorate. For these cupcakes I used a large star attachment and a plastic decorating back to swirl on the frosting. You can also just spread on the frosting and it will look just as good. Enjoy!
