Corned Beef and Cabbage

With tomorrow being St Patrick’s Day and all,  it was only fitting that I made Corned Beef and Cabbage. I had never made it before and was worried I would mess it up. I looked at a gazillion different recipes before I decided to just call my Mom. This is a variation of her recipe and might I say it is pretty good. I made it before St Patrick’s Day so I could write about it for all of you. I hop you enjoy!

1 Bottle stout (I used Guinness, after all it is St Patrick’s Day)

3 carrots, cut into chunks

1 corned beef with pickling spice packet

2 cups water

1 cabbage, quartered and core removed ( I show you what I mean later on in the post)

Cut the carrots. Place the beer and carrots in a slow cooker. Rinse and pat dry the corned beef. Place on top of the carrots. Sprinkle pickling spice on top of corned beef. Add about 2 cups of water to the slow cooker so that the liquid goes half way up the side of the corned beef. You may need more or less water depending on the size of your slow cooker and corned beef. Set slow cooker to low, cover, and cook for 6 hours.

When the corned beef is done you can start on the cabbage. Cut the cabbage in half. You will see a very thick white part near the stem, this is the core. Remove it by cutting around it. Then using a ladle, ladle about a cup of the broth from the slow cooker into a saute pan. Turn on the heat to medium. Add in cabbage. Cover. Cook until the cabbage is wilted and soft about 10 min.

Remove corned beef from slow cooker. Slice across the grain. Serve with the carrots and potatoes. I made mashed potatoes to go with the corned beef. You can add potatoes to the slow cooker while you cook the corned beef. I chose not to do that because I don’t like the taste of boiled potatoes and they tend to fall apart easily when cooked for that long.
